While there's a "food holiday" for just about everything you love to eat,
it turns out there are actually two separate days every year when people come together to celebrate pie:

Pi Day is about math, but thankfully, someone made it fun with pies.
Best of all, a lot of people tend to celebrate the occasion with pizza,
too, which arguably makes Pi Day better than National Pie Day. π
I chose to honor
NATIONAL PI DAY
with
PIE....
Cherry Cheese Cake Pie with a dollop of sweet whipped cream ♥
and
Pecan Pie with
Vanilla Bean
Ice Cream.....
with a cherry on top...
for the life of me,
I don't see ANYthing wrong with having
2 slices of pie....
and it doesn't have to be the same KIND of pie, either....
I hope YOU had a slice (or two) of pie on the 14th !!!

Me, too, and now I’m upset that I tossed the rest of my pie when you had TWO pieces! Your photos are a delight. I think I could go for a piece of pizza pie, too. Does anyone say that anymore? We used to all the time.

ReplyDeleteI know how much you like biscuits. Have you tried this recipe from Trisha Yearwood? It is a yummy breakfast treat or a dessert with ice cream.

serves 8
2 Granny Smith apples
1 c. water
1 c. sugar
1/2 c. (1 stick) butter
1/4 tsp. vanilla
8 canned buttermilk biscuits (the dough...not pre-cooked)
4 tsp. ground cinnamon
Preheat oven to 375 F. Peel, core, and slice the aples vertically into 8 slices each. cover with water to keep slices from turning brown.
In a medium saucepan, mix the water, 3/4 c. of the sugar, the butter, and the vanilla. Bring the mixture to a boil over medium heat.
Separate each biscuit into 2 layers. Wrap a biscuit layer around a slice of apple, stretching the biscuit slightly to overlap, and seal on the bottom. Place the wrapped slices, sealed side down, in a 9 x 12 x 2" casserole dish I used a 9 x 13.
Pour the hot sugar mixture over the apple slices. Don't freak out! This seems like a sh*tload of liquid. I sat there...looking, contemplating...thinking, Trisha- are you sure about this? I mean, I'm sure you know what you're doing, but that is a LOT of liquid. But afterall, they are dumplings, they need water. I'll just what you say. Thank goodness I did.
Mix the remaining 1/4 c. sugar with the cinnamon and sprinkle the mixture over the tops of the wrapped apples. Bake for 35 minutes, or until golden brown.
Yippee for pie especially when someone else makes it. Pie day happens to always fall on my birthday and sometimes I have pie! Happy Weekend to you dear bj!

ReplyDeleteThanks so much for stopping by and for letting me know what you call Whimpies!! LOL!! I googled it and did find that it was called that in the Coal region of Pa. ( where I live) because of the Eastern European immigrants that came to work in the mines. I am not too big on pie but I do like pizza pie!!
