QUESADILLA...
" A flour tortilla is heated on a griddle, then flipped
and sprinkled with a grated, melting cheese
such as Monterey Jack, Cheddar cheese or Colby Jack.
Once the cheese melts, other ingredients; such as shredded meat,
peppers, onions or guacamole may be added, and it is then folded and
served."
I love Quesadillas...
perfect for a quick snack or lunch...
I just butter one side of a SMALL flour tortilla and add it to a warm skillet.
Instead of using shredded cheese, I just put a slice on the tortilla
and then add another tortilla to the top.
...flip it over and by the time both sides are golden,
the cheese is all melted and gooey and sooo delicious.
Sometimes, I add other things like green chilies
but never meat...
meat just doesn't seem right for this .....
Mr. Sweet likes to dip them in a good salsa...
I like mine just like they are.
While I've got the tortillas out, I make a little dessert...
just sprinkle sugar and cinnamon over buttered tortilla and brown until a bit crispy...
ummmm, GOOD !
FRITO PIE
now...my mama used to make a Frito Pie that went into the oven to
heat through and through...
and when it came out...
all the Fritos were SOGGY...
NOT a good thing....
then, Mr. Sweet's Aunt Lorraine showed me how to make one
that has become a real favorite .....
all fresh veggies.
We like to add our cheese BEFORE adding the hot chili...
so it will get all melty and gooey and GOOOD.
Yep...
we like EVERYthing, including the lettuce, to be first
before adding the hot chili....
We always sprinkle a bit more cheese and sometimes, like here,
I add CHILI SAUCE to mine.
This dish, like any other chili dish, is so so good when the weather has turned cooler...

ReplyDeleteYou post some of the best looking stuff! There is so many things you can make with tortillas. I like cutting them into triangles and fry in hot grease til crispy then roll in sugar / cinnamon and drizzle honey on top. Sort of like you did yours. Add fruit for extra yum.

ReplyDeleteI have two sisters-in-law and have been taught many different Authentic Mexican dishes.
One quick way to make a 'cheater's sopapilla' - and I think you may like it....in cut triangles of a flour tortilla, deep fat fry them...cool a short time, dip them into a bag of confectioner's sugar and.........easy peasy....quick sopapillas!!

ReplyDeleteWe had the in-a-bag frito thing at a friend's daughter's graduation party---the whole bar in the butler's pantry was covered in all sorts of toppings and add-ins, as well as a big basket of Frito packs and crockpot of chili-stuff. They called them "Walkin' Tacos."
