When my good blogging friend, VEE, posted about making a
PANNUKAKKU,
I just HAD to make one, too.
Her's looked sooo good.
A PANNUKAKKU is a FINNISH oven baked pancake,
...much like the GERMAN pancake, above....
I made this one last year and it was DELISH !!
Just google GERMAN PANCAKE and you will find lots of wonderful recipes for this treat.
I used TART cherries and powdered sugar on these and....
O HONEY !!
Then, I made a
SWEDISH OVEN BAKED
PANCAKE...
a little more dense than the
GERMAN PANCAKE but
very tasty.

strawberries and whipped cream....
pure HEAVEN !
I put my BAKERY sign out, put on my CHEF hat, rolled up my sleeves and
proceeded to make one, too.
Pannukakku
4 T. butter
or margarine
4 eggs
1 cup flour
1 cup milk
¼ tsp. salt
1 tsp.
vanilla
Cinnamon
Melt butter
in 9x13 pan in oven. Beat eggs, flour,
milk, salt and vanilla and pour in pan.
Sprinkle with cinnamon. Bake at
450 degrees for 20 minutes or until browned.

I bake all my pancakes in a
CAST IRON SKILLET
and just take a look at
THIS beauty.
All of these baked pancakes rise up sooo big and then, when they cool, they fall flat...
and tender...
and tasty....
and now I'm getting hungry for another one....
Nice and large and tender....
Vee and Judy gave us a
wonderful recipe.

ahhhh, a breakfast
FIT FOR A KING....
or QUEEN...!!
For this FINNISH delight,
I decided on using
LEMON CURD .
OOO...
this was so good.
The pancake was light and flaky...
and, as I ADORE lemon,
this was just delicious.
DON'T forget to add plenty of CINNAMON....
it really brings out the flavor of this treat.

Hmmm...this is what John wanted for supper. I obliged, but not wanting it myself, cut the recipe in half and it worked great. I'll remember to make mine in the skillet next time! Thanks for the link love amd for linking to Judy's recipe. She's the Finn!

I have never made one of these and it is on my list of things to try once I'm eased out of the low carb diet I'm on, (which might be never :>( ) It looks so good!

We make the German pancakes sometimes. I will have to try this version. Looks so good!
ReplyDeleteWe had a terrible time with out internet connection for a while. The cable company came and replaced all the wiring and my husband upgraded our wireless router. It gave us a stronger signal most of the time. We are sort of at the "end of the line" from the cable company. My husband thinks that has something to do with losing internet connection or slow connections. With so many people on the system and so many devices(phones,tablets, computers, etc.) it could be, I guess. I don't know a thing about it myself. I know our household has 4 tablets, 2 laptops, 1 phone, roku, and a tv that is wireless. Without my husband, I probably wouldn't even get on the internet. He is our families tech guru. Ha! Good luck with your internet!
Okay...that will be dinner, except I don't have a cast iron skillet. I will figure out something. That looks so good and it seems that all I want right now is high carb comfort food...this brutal winter has brought out the need for breads, potatoes and things my mom made! I love breakfast for dinner and I have all the ingredients.
