well, it sounded so good, I just HAD to make some for
Mr. Sweet and my hungry self.
Jeanie mentioned that fresh herbs made the casserole much better.
I didn't have one single fresh herb in this whole house.
and I baked mine in one of my cast iron skillets.
OOO, YES...
you are going to want to give this recipe a try....
it would be good year 'round...
but it's especially tasty now that the evenings are much cooler...
OOO, I just remembered, I added cheddar cheese to ours....

ReplyDeleteI love Jiffy corn muffin mix! It's made here in Michigan close to where I grew up. It's sweeter than what you are used to though isn't it? It's definitely "northern" style corn bread :)

ReplyDeleteBJ, this is a family favorite of ours - I first tasted it int he kitchen of my future sister in law. You can add so much to it to make it the star of the meal - bacon and green onions for example! So good! I haven't made it since the holidays, that's usually when it makes an appearance at my house, but maybe I will make it next week as it is one of my birthday boys' favorites!

Thanks for the link, BJ. I'm glad you like the casserole and that it turned out well for you. I add variations too -- depending on what I have in the garden or kitchen on the herb end. Love jalapenos and the cheese is perfect!

ReplyDeleteWe use our cast iron skillets all the time. They are so handy! I haven't made anything with Jiffy in a long time, but I remember my mom used to use their corn muffin mix when I was little. I might get a box next time I go shopping just for old times sake. These days my sister makes her cornbread with corn flour ground from corn in her garden!
