Peanut Brittle

One of my favorite candies...

My mama tried for years to make it for us
and sometimes it was great...'
more times than not, it wasn't even edible....too hard...too soft...mostly too HARD.
It is a hard candy to make using stove top method...




Mr. Sweet loved peanuts and he loved
PEANUT PATTIES...
AND...
PEANUT BRITTLE.

He had a good friend that brought him fresh peanuts every season
and he liked some of them raw
and some roasted...
We would spend a couple days roasting them to make candy.

My Aunt Lillian gave this beautiful vintage crock to me many many years ago.
I sure would rather have my Aunt Lillian back instead of this ole crock.
I had some peanuts on hand
and decided to try making brittle.

Have you ever made Peanut Brittle ???
IT. IS. HARD.
(at least for moi)

so....I took the easier way out....
MICROWAVE PEANUT BRITTLE...
and I did I say it was easy.???...NOT

The above recipe turned out to be a fairly good one.
The candy has to be watched, even in the microwave...
I mean, it says "cook 3 minutes" and you better not DEPEND
on 3 minutes...
it can burn quick as a wink so you keep your eyes on it. TIP #1


It gets so hot...
the bowl...handle it with pot holders...!!! TIP #2

And, be careful, after cooking as directed,
pouring it out of the hot bowl onto a pan or foil. TIP #3
I dropped just a little bitty bit on my hand and it hurt
but I had a damp cloth handy so wiped it off really quick and it didn't burn my skin.


 I know I am making it sound like
CANDY FROM HELL
but, really.....
it is sooo delicious...

My favorite Peanut Brittle is thicker than this...
my recipe must call for more SODA...
but....this is good, too.  



YOU probably won't have any trouble making this...
just use my tips and you will do fine.

  10. B.J. I am laughing so hard over the "CANDY FROM HELL"!!! ha ha ha ha LOL I used to love peanut brittle, but can't eat it now because of my teeth. I do make homemade pralines though, and they are very good but also similar to make, ha ha!! Hope you have a wonderful weekend and eat lots of peanut brittle my friend!!

  12. My very favorite candy ever. However, never made any, but yours sure looks great. There is a company in
    Weatherford that makes the best. I buy several packages at a time. Can eat a whole pkg in a day. LOVE it. Yours look super good and being home made even better. Enjoy a piece for me. There a a little farmers market nearby, and I buy roasted peanuts several bags at a time. I am still a country girl at heart. Hang on.

  14. I love good peanut brittle. I have never been able to make a good batch. I made an almost good batch one time. Ive triedt the mirwave and stove top method. IT IS THE CANDY FROM HELL! But it taste like heaven!

    I think I would like it thicker, (the more soda kind) . . .
    I like it when the PB is airy, lighter . . . kind of melts in my mouth.
    I have heard it is tricky to make!

  20. Oh the memories of pulling p'nuts from the ground, shaking the dirt off and waiting until they are ready:) We had a gas heater in the living room and my Daddy would put them on top to parch! OH what I would give to sit there with him one more time. I do love p'nut brittle but I won't make it, you make it for me:) Have a blessed day dear friend! HUGS!

  26. Oh, my! that brittle looks so good. My DH reeeely likes brittle. It is tradition at our church's Autumn Bazaar that one special lady makes up a large glass container of her brittle for auction. DH won that jar 2 years in a row! But ever since, he is out bid by about $50 or so. Popular stuff. (BUT, the secret is that my mother's recipe is better.) Oh, my! mother could make the brittle. Sometimes in almond season, she would make almond brittle with freshly blanched, skinned almonds. To die for! Good memories. Enjoy that delishus looking brittle!
