I made a cake and I am pretty sure I didn't do a post on it...
MY GOODNESS...
I am the one that posts about nearly every bite of ANYthing goes in my mouth.
If I have already had a post on it...SORRY...
I found the photos in my file so I am going to show you my favorite cake ...
because it's the kind my mama made for me
so therefore, it's a
COMFORT CAKE
My favorite cake, growing up, was a white cake with a fudge icing...
and my brother's favorite was chocolate cake with white icing.
I've always loved a REAL fudge icing...
I DOUBLE this recipe for a large cake...
bundt or sheet cakes need a double amount of this wondrous stuff ! ! !
1/4 cup cocoa powder
1 cup sugar
1/4 cup butter
1/4 cup milk...
1 tsp Vanilla
**
Mix cocoa and sugar in a pan really good...
add the other ingredients except Vanilla...
cook over medium heat..
DO NOT STIR as it will turn to grainy sugar..just as in fudge candy.

set your timer for 6 minutes..
remove from flame and add Vanilla
(you can dab a bit behind ea ear like my Aunt Lillian did...
and I do it every single time, too).

Beat icing with a hand mixer until it begins to thicken just a little...
quickly pour over cake.
Sometimes, I beat mine a tad too long, it starts turning to fudge candy
and I can barely get it on my cake...
Case in point...
it's not so pretty when it won't go all over the cake...
but, ooo, it's sooo good.
So good, in fact, that when I have this cake,
I have it for breakfast sometimes........
I'm not sure if it's so good to me because I think of my sweet mama...
or if the Vanilla behind my ears makes me remember my Aunt Lillian...

ReplyDeleteSome of the recipes from back when are better than some of the newer things. I have many recipes that were my mothers. I hope someday someone will appreciate them when I am gone. I do not cook much just for me. I dream of having some of yours tho. Love a good cake, but not for breakfast.

I will have to try your recipe...it looks scrumptious! One of my kids prefers white cake and the other chocolate...either one is fine by me as I haven't met too many cakes that I didn't like!
