The first blog I looked at this morning, with my first cup of coffee of the day, showed

OATMEAL PECAN COOKIES by the Barefoot Contessa sounded like a WINNER to me....
(I love that woman...she can cook...she's such a gentle soul....and so pretty.)
If YOU like OATMEAL Cookies, here's her recipe and I think nearly 300 comments on the cookies were

...coffee is ready and I'm about to have a cup while getting out all the baking paraphernalia ...
The first thing....
2 cups pecans, TOASTED for a few minutes.
This brings out a flavor you can't get without toasting......
which just MAY be the reason for 5 STARS !!

This cute stacking bowl set came from WALMART a couple of years ago...
I've no idea if they still have them but, if you like them, you might look around the next time you are there.
To me, THAT much oatmeal means it's a HEALTHY BREAKFAST COOKIE....
(the recipe calles for RAISINS but we don't really like them...
I had some dried CRANBERRIES that I SHOULD have used but
actually forgot them.
This little CHOPPER is vintage and it belonged to my mama.
I have an electric chopper...
but, somehow,
everything seems to taste better when I use something that belonged to MAMA.
Now, I know we all have different tastes....
but, if you like oatmeal cookies chock full of toasted pecans,
you will love these....
If making these cookies using THE BAREFOOT CONTESSA'S recipe
would only make me as pretty and soft spoken as she,
I would make a batch every single day.
O, I do know that there's probably no such thing as a HEALTHY cookie...
just.....
DELICIOUS ones. :>)

ReplyDeleteThey sound so good! I love a bowl of oatmeal in the mornings but I haven't tried to make cookies without sugar and I can't eat sugar at all any more. I sure miss these cookies! I guess I'll eat more oats in a bowl! lol Hugs!

ReplyDeleteAbout the only time I turn on the tv lately is to watch Ree's show on the Food Network and I've seen Ina's show. You are right, she is a pretty lady and I love listening to her talk. Her voice is so soothing. And she makes cooking look so effortless! Your oatmeal cookies look divine and sound healthy to me! Beautiful post, bj!

ReplyDeleteOK, cookies for breakfast just makes me grin. It also makes me want cookies for breakfast, but I think I'm way too lazy to be dragging out the cookie sheets this morning. I am, however, a well known cookie baker in my neck of the woods and have never tried pecans in my oatmeal cookies. I will definitely be trying her recipe.

Oatmeal cookies are a favorite here. I love trying new recipes for them, but we always fall back on my mom's recipe. Guess our taste buds are just use to them? Wonderful pictures! Today is a peach cobbler day at our house! Have a great day!
