Eye Rolling Cornbread Muffins and Homemade Veggie Soup

I am one that LOVES trying new recipes...
sometime, they get a "ooo, that's good" look from Mr. Sweet
and sometime, I get the
"I can't believe you made this..."
and THAT remark is NOT GOOD...
but THIS recipe had him rolling his eyes, in a GOOD way...
AND...
he made me PROMISE to make them many, MANY more times.

I stole this delicious-with-a-touch-of- HEAT recipe from HERE.

for this delicious, quick breakfast cornbread muffin recipe.

Her photos make me GREEN with envy...
they are stunning ! 


I had all the ingredients on hand, so,
on went my apron...
rolled up my sleeves...
put on my high heels and pearls....

 

channeling my inner
 JUNE CLEAVER



 


The muffins went together in a flash...



I added Rotel tomatoes with green chilies..drained.
Also added some fresh Thyme and wished for fresh Cilantro 


Red and green peppers make for a colorful muffin..
and I do like a lot of butter on mine.


and when our girl, STACY, brought us a big pan of homemade veggie soup,


I knew in a flash those cornbread muffins full of flavor
weren't just for breakfast..

Oh, my...
how good was this middle of the day lunch...
"Thanks, Stacy...it was so delicious and really hit the spot."
We love you !

  10. The muffins and soup look like they were meant for each other! I made a similar meal today--chicken and dumplings with cranberry-orange muffins! I guess today is a good day for soup.

  16. I've made some recipes of things over the years where I take one bite of it, get up from the table, and scrape the whole thing straight into the garbage can. It's always so nice to find a recipe that's delicious and worth the time and effort it takes to make it!
