It's so rich and filling,
I can only eat a half.
Since Mr. Sweet doesn't like his sweet potato SWEET,(where IS he from..??)
he won't eat the other half....sooo
I fold the skin over the other half, cover it in Saran Wrap, pop in fridge
and have it with my next meal.
It's the addition of marshmallows
for me...
that's what takes it all over the top.

I wonder who was the first person who decided to put marshmallows on sweet potatoes? I know it's popular but it does seem like a random combination.

I have one sweet potato left in my pantry! I'll skip the marshmallows and add the cinnamon, brown sugar, pecans and butter. Love them ~ absolutely love them!!

I LOVE sweet potatoes like that. To make them just a little more sinful, I add caramel sauce (like for sundaes). YUM! I got that idea from Texas Roadhouse.

I love sweet potatoes, but I have to admit, I would eat the marshmallows on the side ;) Have you ever tried oven fried sweet potatoes, cut in wedges, tossed in olive oil and baked? My girls used to get excited every time I made them.

Oh my goodness, BJ! I have NEVER had a sweet potato with marshmallows..OR pecans, for that matter. With DH being diabetic, I used to put a little butter & some Splenda Brown Sugar & cinnamon on ours. I will try it your way next time, for sure!

OMG...I luv sweet, sweet potatoes! You do add those pecans (which I usually forget to do) and I KNOW that sends the concoction over the top!! That's such a great way to save the other half that you didn't eat!!

ReplyDeleteYummy! I love sweet potatoes and will eat them plain. My mom would slice cold cooked SP length ways into 'planks' and fry in butter and brown sugar. Caramelized sweet potatoes. Happy Pink Saturday!
