Try to take it EASY.....

I am worn out from getting READY to move....
MOVING...
and getting SETTLED.

Therefore, I intend to "take it easy" throughout the next month.

I hope YOU will not try to do TOO MUCH...
Save your energy to enjoy your family....'
that's sure what I intend to do.

We're  all going to have some wonderful family and friends stop by for lunch
or dinner and we'll be sooo glad to have them.

No sense wearing ourselves out cooking tho.....



For a few guests,
a favorite of mine is to
start with a little 1 1/2 lb. center cut pork roast....

rub with olive oil,
brisket rub
salt and pepper
and wrap it in foil.

Into a 325 oven for about an hour and a half....

Using this rub eliminates the tons of spices you have to have to make your meat taste good....
and it's a lot quicker.
and delicious.



 It comes out looking pretty enuf for company
and it is fork tender and delicious.


add a simple baked potato,
with toppings of your choice....
butter, sour creme, bacon bits (they're great and NO COOK)
cheese...
all great toppings and come already prepared so it's easy.

  add a great salad....

I love this one with pork...

sweet, seedless grapes, chopped celery, mixed with a tiny bit of lemon or lime juice, grated cheese and a spoonful of REAL mayo..

It has very few ingredients and goes together super fast.

There's tons of good recipes out there that require very little prep....
and very little time so that you can squeeze in a nice long nap before your guests arrive.

All of it together adds up to a wonderful afternoon lunch or elegant dinner
and it all comes together without working your heart out.

Sometimes, the simplest of meals can be the very best kind.....

We have another holiday coming up and we can really get carried away with
baking,
preparing meals.....
everything that usually goes along with holidays and family gatherings.

Pre-made foods such as pie crusts, are very good now...
pies and cakes at your local bakery can be delicious...

and don't forget THIS old fashioned, all-time-favorite dessert...




Ice cream and your favorite store-bought cookies can be a
HARD TO BEAT DESSERT....!!

Take it easy, rest a lot, purchase pre-made foods when you can....
and ENJOY the holidays without being
worn to a total frazzle. !!

I surely intend to ENJOY my holidays without all the stress and hard work.

  1. Oh my, bj ... that looks just delicious. I love pork roast and will try this method the next time I cook one. Unusual salad, but sounds and look good. I would love it, but not Mr. Z. You are a good cook and great tips on how to not wear yourself out with all the cooking ... take shortcuts. Good idea !!!

  3. I'm worn out from packing and moving also!! I am hoping to just relax and really enjoy the holidays with my family. I think I will take your advice and do some semi-homemade desserts and simple meals!

  8. Oh- I so needed to hear this tonight, bj. I have been stressed all day thinking about how far behind I am on every single Holiday thing that needs to be done. You are right- I need to step back and not stress out so much....even IF my double ovens are not working !!!! xo Diana

  10. Everything looks wonderful, bj. I love pork roasts and I'll have to look for the brisket rub. I tend to do very simple meals like this except on Christmas Day when I'll have turkey and all the trimmings. But, I'll do many things the day before so there is not so much to do Christmas morning. I'm thinking of even baking my turkey a day ahead. I've done it before and it worked great.

  11. That looks like a good meal. I do plan on taking it easy this holiday season, or the best I can. So many years we try to do it all and feel exhausted most of the tim. Not this year.

  15. I love easy meals and ready made deserts. I plan to take it "sort of" easy this season. I love Christmas. Sitting around watching Christmas movies and easting cookies and drinking hot cocoa are some of my favorite activities. I also like buying girts - and I am not a shopper. I should be Santa! LOL

  17. Taking it easy and doing things simple sounds great to me! Our house is up for sale and even with the Christmas season so near, we are still having lookers. So, not feeling under stress is a priority for me this year. I am definitely going to try your pork roast recipe. It looks delicious! And, I agree with the ice-cream and cookies. Best dessert around!

  20. gonna try that pork recipe... I too just moved on the 24th of nov. from a home I was in 18 years. took me 3 days to find my undies lol.
    my tree is up and the mantle and bar area of the kitchen are decorated-- wreath on the front door and by golly thats all I'm doin this year.
    Planning to have lots of soup n sandwiches and dinners will be food from take out...
    Mrs Smith makes great apple, pecan and mincemeat pies and I'm letting her do all my baking:)

  21. The pork looks really good, but I've never heard of brisket rub! Is that what it's called? Is there a brand name? You're a smart cookie to take it easy. Some years we have lots of time and energy to do it all, and other years, it's just more important to do it the easy way so we can still spend time with friends and family :>)

    Bless your heart having to move in this awful Ice Storm that we have had. I saw a really cute sign that said Texas is Closed and that is just about it. I would just love to sit down to your wonderful meal, it looks delicious and your home is always warm and filled with love!
