We had chicken for meals a lot when I was growing up.
Mostly fried chicken...
or Chicken and Dumplin's, which was my favorite
and still to this day, a comfort food for me.

We don't eat a lot of chicken (other than Chicken Salad) because I'm
not a fan of chicken.....or turkey.
That cute little rooster there....?
He is one of my favorites...not sure if it's because he's black and white
with polka dots or if it's because he's a pretty SASSY rooster, strutting his stuff.
He's a cutie.....
Went thrifting last week with Mr. Sweet and found this great white pitcher.
I usually don't use my white pitchers much....they are rather small for iced tea,
but this one is a little larger than some of my others and I've been using
it ever since I got it.
I coated these thin chicken breasts with olive oil and sprinkled
RANCH DRESSING MIX
on ea piece, trying not to get too much as the spices are strong....
.....baked at 350 for about 45 minutes.

and, yep, that's a piece of ORANGE CRUSH CAKE beneath
the layers of ice cream.

Yummy. The little rooster is rather sassy. Made me hungry for chicken. We don't eat a lot. The Cowboys back in the day corporate job he sold/brokered chicken. He was always eating it at work! I still have to sneak it into the menu plans.

ReplyDeleteI like chicken - always have. I am having grocery store rotisserie chicken tonight. I'm working far from home, and after a day of interviews with clients I just wanted to kick off my shoes and be alone. A market salad and a bottle of sparkling water - better than any restaurant meal!

We eat a lot of chicken and I love turkey! What Louis Dean would REALLY like to eat more of is BEEF!! Remember that Wendy's commercial? "Where's the BEEF?"

Waaaaay back at my freshman orientation they served chicken that wasn't fully cooked. (Yech.) Well, it was another 30 years before I'd try it again ... on purpose. Now - particularly given the price of beef - I love it. This recipe sounds perfect to keep nearby when my SIL comes to visit.
ReplyDeleteI grew up on fried chicken as we raised our on. We eat more chicken around here as I am not a beef eater but I don't fry it anymore. Love chicken salads and baked chicken so this recipe is one to try. Your pictures make everything look so pretty.
