Have your CAKE and eat it, too



  When THE TUMBLEWEED CONTESSA made this old fashioned SWEET STRAWBERRY ICE BOX CAKE, I knew I had to make one, too.

The main problem, other than it being at 10:00 at night, was that I didn't have enuf STRAWBERRIES.....

but I had a few...and I had fresh BLUEBERRIES....

So I mixed them, added a bit of sugar sub.
and went to town on making that
STRAWBERRY/BLUEBERRY ICE BOX CAKE....
following her recipe except for adding BLUEBERRIES along with the strawberries.


It baked up nice and pretty and filled the baking dish.

and, this is where THE TUMBLEWEED CONTESSA and I parted company....♥♥♥

I am not a fan of POWDERED SUGAR ICING...

My favorite icing in the world...
♥ ♥ ♥ CHOCOLATE CANDY ICING ♥ ♥ ♥ 

and everybody that LOVES  Strawberries and Chocolate
~  CLAP YOUR HANDS ~

I made a CHOCOLATE  glaze
 (with a few pecans thrown in)

Mr. Sweet and I have learned to not ICE the whole cake...
just add a tiny bit of icing or glaze to the individual piece...
this really helps us from eating too much of the calorie-laden icing.



Most of us sure love our sweets..

If we
use a sugar sub when possible...
eat only a small piece of dessert...
cut waaay back on the icing, frosting or glaze...

it's more healthy for our bodies
and it can still
FEED  OUR  SOUL...

  5. You know what could maybe work also, bj? Natural strawberry jam - gives you the fruit and the sugar - if ya don't have enough on hand.

    You know I have never had strawberry cake, bet it would make cute mini cupcakes for a ladies tea party!

  8. My mouth is literally watering right now. Great idea to put just a small amount of frosting on the piece you eat. I have started using sugar substitutes and looking for low carb recipes so I can have my cake...and eat it too ;>)

  18. Your words are what I live by when it comes to dessert! Even though I'm a diabetic, I can have a small piece of cake, especially if a sugar substitute is used :-)

    Mr Irish will be very happy . . .
    Michigan strawberries are amazingly sweet and available right now!
    No pink icing, a bit of chocolate glaze and some pecans . . .
