70 degrees here.....1/17/19

and even tho it's so warm,
I was SOUP hungry...


and I had a few potatoes that needed to be used  RIGHT NOW.
so....
POTATO SOUP it was.




I bought these little 
RABBIT 
napkins several years ago to use at
EASTER....

I think he is so adorable, I almost framed one...

(and I still may)



















We make all kinds of POTATO soup around here....
sometimes with SOUTHERN HASH BROWNS ( Paula Deen's recipe)...
in the crock pot and it's really good.

 Sometimes we add celery and even carrots .....


One of my favorites is just plain POTATO SOUP.
I leave the peeling on if it's the thin skinned potatoes, like GOLD....

Lots of vitamins in those potato skins...
and they taste so good.

I just used large pieces of Gold potatoes in this batch...
lots of butter
salt and pepper
caramelized shallots for LOTS of flavor....
and milk.
Very much in the same way as my mama did...💖



I've had a box of HATCH CHILI BISCUIT MIX
for awhile and wanted to bake them to go with my soup.


They turned out good...
I added lots of grated Cheddar....
but not nearly enuf peppers in them for my taste.
and
like all drop biscuits, they were very crumbly...
I just put butter on top instead of trying to slice them.

I assumed they would have SOME heat but.....nope.
I only baked 4 for myself and put the rest of the dough in the freezer.
I'll add more peppers to them.

 



Of course, you can add all kinds of goodness to
BISQUICK baking mix.....

  2. One of my favorite soups is the potato one, too. And, I make mine with onions and milk and a little thickening. Yummy. I just love the lay out of your blog, BJ. So easy to read and fun to look at. I've tried to change mine around some but it's not there yet.

  10. I have to say the napkins are super cute, love the bunny. Your soup looks great and I love bisquick biscuits. My hubby likes biscuits that stay together but not me.

  15. drooling over here!!! i LOVE potato soup and i have a great recipe that uses a can of cream of celery and a can of cream of mushroom soups and then milk or cream, whatever i have. i start with bacon, then either shallots or sweet onion, it's so good, i may have to make some tomorrow!!

    the biscuits look good too, i just love the ones red lobster serves, have you ever had those??

    Yum! Does that look good! I too made a pot of soup as we are in the middle of a snow storm and then will get an Arctic blast with wind chill factors making it feel like 15 below zero!!!
