My Favorite COMFORT FOOD....

 CHICKEN AND DUMPLINS'....

there's nothing in the world that makes me feel better when I am missing my mother and daddy.....

She made her dumplings from scratch....and they were the best in the whole world.
She also always boiled a whole chicken and the stock from it was FULL of flavor.

Sometimes, I use a rotisserie  chicken, taking all the WHITE meat off the bones...
then boiling bones and dark meat to make a flavorful broth.


I keep canned  premium CHICKEN BREAST in the pantry
and I  added a can to this large pot since I wanted to make enuf for
all the family.


I don't add the chicken until the dumplings are almost totally done...
That way, my chicken doesn't become SHREDS from too much cooking.

I often use canned biscuits for a quick pot of Chicken and Dumplins'
but every now and then, I get my little recipe box out and find
my mom's recipe.
Making them from scratch surely takes a lot longer.....


You must roll the dough....


 and cut them in long, thin strips.


and it seems my sink was FULL of dirty pots and pans and bowls.....

when using canned biscuits, you bypass all this mess...

but, they don't taste like my mamas dumplins'.
Even when I use them, I don't pinch off pieces and put in the broth...

I like to mash them flat and cut in strips....just like when I make them from scratch.
We like thin dumplings so they aren't gummy...
and large pieces of chicken instead of shreds....
That's just the way we roll....


Look how rich and delicious looking that broth is...
and the white chicken and dumplings simmering...
my kitchen smells just like her kitchen smelled.
And, it is bittersweet...
it makes me miss her sooo much...but it also makes me smile
to know that she left me with such a sweet memory.


BOY.......
they sure are good.

  4. One of my favorite foods. I go to the Cracker Barrel often for theirs. They are a good substitute for what my mother used to make. None better than what our mothers made from scratch. Said I was not going any further West than where I am, but to get some fine cooking, may have to move to Lubbock.

  5. What????? You're going to tempt us all with that yummy looking dish, but not give us the full recipe for the old fashion version??? My ex mother-in-law was the best Kentucky cook ever. Her chicken and dumplings were legend. I divorced the husband, but his mother and I stayed friends til the day she died.

  6. Husband loves Chicken and Dumplings. I make them from Bisquick. :-)

    Yours have to taste better, because of the memories. How could they not????

  7. Love chicken and dumplings. I use Bisquick mix to make my "homemade" dumplings and just drop the dough by little spoonful into the broth. Yours looks delicious!

  10. It looks very comforting - could be just what I need today! I have a recipe from my mama, too. Her dumplings are fluffy, like pillows. Definitely need to cook up a pot of it after reading this!

  11. I do all of it except the dumplings..I use those wide noodles..but I'm motivated to try your way. But then I always am. :)
    I miss my Mama too...a lot! With me it's her pot roast.

  12. That's my all time favorite comfort food, too, bj. Most of the time I make fluffy dumplings for mine, though. However, if I want the flat dumplings, I've bought Reames frozen egg dumplings (and they also make noodles), which are so incredible. See if you can find them in your grocery store. You'll be amazed!!!

  15. Our English version of dumplings is more like biscuits on top of the chicken stew. I ordered this once in the US and couldn't figure out where the dumplings were. LOL

  16. Mmmmmmmm....... those look sooooooo good. Last night was cold, too, so perfect weather for it. There is nothing better than chicken and dumplings on a cold wet day. I usually start them in the crockpot - but sometimes they're delicious and sometimes the dumplings are a little under or overcooked. I haven't got the timing of when to toss them in down just yet.

  18. Look at that! Oh my... love the idea of rolling and cutting the dumplings into strips rather than dropping the dough. I'm going to try it one day soon.

  19. Looks so good bj. Chicken and dumplings are one thing I have never had success with. May try Reames frozen egg dumplings as Kittie suggested. My Mother-in-law was the best dumpling maker of all times. She never measured anything ... just a pinch of that and dash of that and flower everywhere. Thanks for making us all hungry, while remembering olden times and comfort food.
