Recipe from THE MARMELADE GYPSY

belongs to my good blogging friend,
JEANIE
and she just had a post not long ago about visiting
JIFFY MIX FACTORY
where they make the infamous
 JIFFY CORN MUFFIN MIX.
You should go over and check out her post...very interesting.
I love that mix.

AND...Jeanie shared her favorite recipe using this corn muffin mix...

well, it sounded so good, I just HAD to make some for
Mr. Sweet and my hungry self.

Now, I can't help but add a few of our favorite things to some recipes...
Jeanie mentioned that fresh herbs made the casserole much better.
I didn't have one single fresh herb in this whole house.

I added these spices....
plus CHOPPED GREEN CHILIES.

and I baked mine in one of my cast iron skillets.

 OOO, YES...

you are going to want to give this recipe a try....
it would be good year 'round...
but it's especially tasty now that the evenings are much cooler...
OOO, I just remembered, I added cheddar cheese to ours....
YUM

"Jeanie...
thanks so much for sharing this delightful recipe."
Love, Jeanie (aka Betty Jean aka bj)

  2. So what you're saying is that we're on our own? I did think the original recipe sounded very good. You jazzed it up Texas style!

  5. I love Jiffy corn muffin mix! It's made here in Michigan close to where I grew up. It's sweeter than what you are used to though isn't it? It's definitely "northern" style corn bread :)

  6. I have made this for years BJ! I never thought of dressing it up with jalapenos and more cheddar! YUM-O! Have a wonderful weekend...I am SO hungry now!

  7. BJ, this is a family favorite of ours - I first tasted it int he kitchen of my future sister in law. You can add so much to it to make it the star of the meal - bacon and green onions for example! So good! I haven't made it since the holidays, that's usually when it makes an appearance at my house, but maybe I will make it next week as it is one of my birthday boys' favorites!

  10. I have never seen that mix here in my province (not to say it isn't some where though) and I would just love to try it. May have to make a trip to Minot North Dakota and see if any grocery has it there....

    God bless.

  11. BJ, I use that mix all the time. I keep some in the fridge. That looks good how you cooked it up. I think Ted would love it...peppers seem to be one of his favorite things. LOL. Blessings, xoxo, Susie

  13. I just bought 2 little boxes of that Jiffy corn muffin mix.
I usually make it in my small iron skillet then give a neighbor 1/2 of it. I'll try this
    and share it also.

  15. Thanks for the link, BJ. I'm glad you like the casserole and that it turned out well for you. I add variations too -- depending on what I have in the garden or kitchen on the herb end. Love jalapenos and the cheese is perfect!

  17. I don't know that I've ever seen corn bread mix in our stores - but I'll look for it. Your cornbread skillet looks so delicious! Perfect with chili for dinner.

  21. We use our cast iron skillets all the time. They are so handy! I haven't made anything with Jiffy in a long time, but I remember my mom used to use their corn muffin mix when I was little. I might get a box next time I go shopping just for old times sake. These days my sister makes her cornbread with corn flour ground from corn in her garden!

  22. My mouth is watering! Will give it a try back in the States as Jiffy is one of the few brands that haven't appeared in our local grocery store!
