CINCO DE MAYO.....

May 5th...

...HAPPY CINCO DE MAYO

Mr. Sweet and I love Mexican Food to the moon and back.....and then some.

We don't have to wait for Cinco de Mayo to visit
       ROSA'S CAFE & TORTILLA FACTORY.



No sir-ree-bob....
we eat at this awesome cafe at least once a month...
and sometimes MORE..
Yep.....we DO love us some Tex-Mex.
 

Not only is their food totally GOOD..
all the colorful bits and bobs around in the cafe
give out AWESOME ATMOSPHERE....
 

I love the brightly colored Mexican pottery.
I'd love to take a shopping trip to Mexico, like we used to do...



Mr. Sweet nearly ALways gets the 
TACO PLATE.
 

I change up nearly every time we go..I've never ordered anything I didn't just love...
this is their delish
CHEESE ENCHALADAS
and I sprinkle plenty of fresh CILANTRO ....
i love that stuff...

Hot, fresh Sopapillas...
my favorite Mexican dessert...

I made these with store-bought flour tortillas...
just cut a whole one in 4th,
deep fry in hot oil, using a fork to hold ea under the oil for a good puff.
If they don't puff, the oil isn't hot enuf so turn on that vent ...you will need it.

You can google a homemade Sopapilla recipe ...
or pick up a Sopapilla Mix at the groc. store.


 

 

 


MARGARITA SLUSH

2 (10oz) cans of frozen Margarita concentrate
1 cup Tequila
1/3 cup fresh lime juice (2 or 3 medium limes)
1 medium lime, cut into 6 slices
Margarita salt for glass rims
1 12oz. can lemon-lime carbonated beverage

  • 1 In medium bowl, combine margarita concentrate, tequila and lime juice; mix well. Spread mixture in 8-inch square (2-quart) glass baking dish. Freeze at least 5 hours or until set.
  • 2 To serve, run lime wedge around rim of each glass; dip in margarita salt. For each drink, spoon 2/3 cup frozen mixture into glass; pour 1/4 cup carbonated beverage over top. Garnish with lime wedges.

  1. I eat Mexican food at least once a week, but have not tried this place. Looks so tasty. However, I cut the rice. I would be laying o n the floor with one of those drinks.

  2. Us too BJ, love Mexican food and tomorrow on the 5th which is a bigger holiday in the U.S.than in Mexico, is always a day to go out and celebrate and indulge in our favorite Mexican treats. Hey BJ really cool header my friend!

  7. I love that restaurant too. Will have to try to make sopapillas like you advised. I got used to homemade ones in New Mexico and we don't find good ones like those here in NE Texas.

  9. Your killin me with this Mexican food...my favorite, I think. Anywho, we will be at our Mexican dive tomorrow evening for Cinco de Mayo. We actually have a standing Tequila Tuesday meal there every Tuesday. Happy Cinco de Mayo falls on a Tuesday this year! Lilliana (our favorite waitress) starts making our margaritas when she sees us drive up! If we end up in Austin I'm going to put this restaurant on our "go tos" Ejola!

  12. Don't forget ~ tomorrow is Taco Tuesday at Rosa's! There is a new one just a few blocks away and it's much better than the one we used to go to. Mexican food is a must ~ could eat it anytime! Enjoy your day tomorrow ~

    I shall stop at HEB to get the ingredients on our way down to the ranch tomorrow. I already HAVE the tequila!!

    I am soooo hungry now after seeing your post. OMG that taco plate the hubbster is having looks so yummo! I love Mexican too. I cannot get enough of it. That place looks really cute and the food looks pretty delish. I think I would be in there more than once or twice a month you have good will power girl. Who does not love a good Margarita!   33. We love TEX Mex too, but it's hard to find in Florida ... Lots of great ones in Oregon and authentic Mexican too from all different parts . Not so much here tho. So we made our own celebration on the day. Bills margaritas were awesome.
