The night before our annual CHRISTMAS EVE FAMILY TIME,
I start preparing for our Christmas Eve Feast.
We always....ALWAYS have HAM.
Not just "any ole ham" but a delicious
HONEY GLAZED HAM.
Tonight, I am getting things going for a
KNOCK 'EM DEAD
Potato Salad.
I start off with BABY RED GOURMET POTATOES....
After scrubbing them clean, I boil them to just the right consistency....
I want them done thru and thru but not mushy.
I like to be able to slice them into nice chunks for the salad.
...such pretty red peppers....
I chop the peppers...
and green onions...
always green onions....they are so full of flavor.
(Memory time here....:)
When I was a little girl, my mama always had a garden
and she always planted onions.
When she would bring some in from the garden,
it was my job to wash them.
She always told me to run water into the green ends as bugs might be inside the stems.
I still do the same to this day....and I never, EVER find a bug .
After I get all my veggies chopped, I sprinkle them lightly with Morton's
Nature's Seasons.
It really brings out the flavors...
and into the fridge to add to the potatoes tomorrow morning.
After everything is added, the potato salad will have time for all the flavors to marry before I serve it along with our delicious ham.
Another thing being made ready for CHRISTMAS EVE....
Most of you call them PINTO BEANS...
out here in West Texas,
they are RED BEANS.
and, BOY....
do they go great with HAM and POTATO SALAD.
They have been soaking most of the afternoon...
and will cook all night long.
...by serving time CHRISTMAS EVE,
they will be just right....
and so delicious.
After all this food prep, we were starving so
Mr. Sweet
enhanced a PAPPA. MURPHEY'S
CHEESEBURGER PIZZA
with peppers,
bacon
onions.....
baked it for 12 minutes in a 425 oven and....
we dined
IN STYLE....
MERRIEST CHRISTMAS, EVERYONE.
